Mashed Sweet Potato Recipe


The caves were designed by Greer-Ann and Bertram Saulter. The hotel consists of 10 handcrafted cottages at the edge of the sea. The two seafront acres hide many secrets - sundecks and nooks, even grottos in the cliffs itself. One of the these grottos is intended for dining and is lit with candles and strewn with flowers. The Caves is a wonderful getaway on the Negril cliffs.

Mashed Sweet Potatos

Makes eight servings.

 

Ingredients

8 medium sweet potatoes (about 4 lb/2 kg)
2 tsp (10 mL) salt
2 tbsp (30 mL) brown sugar
½ tsp (2 mL) salt
¼ tsp (1 mL) white pepper
½ tsp (2 mL) cinnamon
¼ tsp (1 mL) fresh ground nutmeg
¼ cup (65 mL) cream
4 tbsp (60 mL) butter

 

Method

Peel sweet potatoes and cut into quarters. Cut each quarter in half again. Place in a pot and cover with cold water. Add all but half a teaspoon of the salt and one tablespoon (15 mL) of the brown sugar. Bring to a boil, reduce heat, and simmer for about 15 minutes until very tender. Potatoes should mash easily when pressed with a fork. Drain potatoes and return to pan over very low heat. Return to burner until all moisture has evaporated (about two minutes). Remove from heat. Mash until very smooth. Combine the rest of the salt with the pepper, cinnamon, the remaining sugar, and nutmeg in a small bowl, then stir in the potatoes. Place cream and butter in a saucepan. Heat until butter melts. Stir into potatoes and serve.
